Fresh Apple Pound Cake
2 c. sugar
1 tsp. soda
1 c. chopped pecans
3 c. flour
3 c. apples, diced
4 eggs
1 tsp. vanilla
1 1/2 c. cooking oil
1 tsp. salt
1 c. coconut | |
Mix sugar and oil. Add eggs, one at a time. Sift soda, salt and flour.Add to egg mixture
and beat well. Add apples, nuts, coconut and vanilla.
Bake in greased and floured tube pan for one hour and 20 minutes at 325 degrees. Do not
open oven while cake is baking.
Topping: ( optional )
1 c. brown sugar
1/2 c. chopped nuts
1 stick butter
3 tsp. milk
Place all ingredients in saucepan and bring to a boil. Cook until soft boil stage. Pour on
cake while warm. | |
