2 c. grated carrots 1 1/2 c. cooking oil ( Wesson or Mazola ) 2 c. sugar 4 eggs ( well beaten ) 3 c. plain flour 3 tsp. baking powder 2 tsp. baking soda 1 c. finely crushed walnuts or pecans
Cream all together and add nuts. Pour in stem pan and bake 1 hour at 350 degrees. After cake cools, ice with cream cheese icing.
8 oz. cream cheese 1 stick butter 1 or 1 1/2 boxes powdered sugar 1 tsp. vanilla 1 cup chopped nuts
Cream butter and cream cheese and add vanilla. Slowly add powdered sugar until icing is appropriate consistency. Spread over cooled cake.
Note: This Cooking in Conway carrot cake recipe is still a family favorite. This has always been the requested birthday cake for my children ( from as young as 4 years old ! )
