Beat eggs and add sugar. Stir in pineapple and juice. Add sifted dry ingredients and vanilla. Bake in 9 x 13 pan for 20 -30 minutes at 350 degrees. Cool.
Topping
Mix and boil 10 minutes. 1 stick oleo ( I use butter. ) 1 c. sugar 1 c. evaporated milk 1 tsp. vanilla 1 c. Angel Flake Coconut 1 c. nuts Cool throughly. Top cake.
Note: This pineapple cake recipe from " Cooking in Conway " by Trinity United Methodist Church in Conway has also been one of our favorites through the years. This cake is very moist and stores well. Sharing this recipe reminds me of the many, many oyster roasts we enjoyed with my husband's mother, his 4 siblings, their children and several of his aunts, uncles and cousins.Pineapple Pan cake was the favorite of the adults but of course the children roasted marshmallows! These much missed family gatherings were held in Brunswick County's wonderful Varnamtown.
